Civet de Lievre ou de Lapin

Mister Bunny was eating my Watermelon plants down. How is this TX lady supposed to keep up with that? I took care of it.

A little prep

a little braising

Red wine sauce

and a simmer


One small tender rabbit 
Salt and pepper
half and onion
2 grated carrots
2 small mince celery 
a few dashes of dried thyme and sage
1 cup wine
2 cups water
a roux of apple smoked bacon lard and 1 tbsp flour to make the gravy
1 tsp of my 2:1 reduced organic balsamic

YUM YUM! and now the watermelon is back on track!

By the way this was our first time to eat rabbit and it tasted looked basically like chicken.  I took it to a family dinner.
